Duties
- General:
- To uphold the company beliefs and Brand DNA at all times
- To understand STANDARDS as set by Song Saa and to maintain them as documented
- Oversee and direct Basic Mise en Place for the F&B outlets
- All food handlers must follow best practice when handling food - to stop contamination / illness
- Relieve other positions if needed
- Will be required to work in all bars and restaurant when necessary
- To learn and apply all basic principles of drinks service and food service
- Ensure all operating procedures and high standards are maintained at all times
- To arrive at work on time, as per your roster, and remain at work until service for your shift that day is completed
- To assist in making the F&B department a profitable operation
- To lead in the department and outlet until the work is complete and also if the required/delegated work has not been achieved
- Proper handling and maintaining of all equipment within the bar and restaurant, thus ensuring the proper up keep of all equipment and the prevention of damage and loss of property
- To oversee and direct the rotation of all perishables on a daily basis, making sure that all mise en place are properly labeled, cleaned and stored. Thus reducing wastage to a minimum
- To ask the F&B Manager for extra information and training at all times
- To assist in staff development and training
- You will be required to carry out extra duties from time to time within the Food & Beverage framework
- To attend all Food & Beverage and staff meetings
- To ensure the absolute highest standards of cleanliness are maintained in all food and beverage areas and to ensure that all necessary cleaning equipment and products are available in all areas
- Food Service work should be done to the highest quality and standard of the resort and the guests’ expectations
- Restaurant service, handling and production should be done to the highest standards, thus creating a consistently high quality of standards
- Ensure that the reputation and image of the food outlets in the resort be sustained and improved all the time
- Carry out other requests that might be asked of you from time to time
- Maintain an excellent reputation in the eyes of the guest, management and staff
- To contribute to a content, challenged and stable team
- When not required in above duties to assist Food & Beverage department as and where needed
- In all food service areas, the highest standards, professionalism & a level of consistency that ensures that Song Saa Private Island’s reputation and for what it stands for is upheld at all times
- A streamlined, efficient operation that contributes to the profitability of Song Saa
- Administration
- Undertake all office duties as required by the management team including, but not limited to, daily menu checking and printing, completion of breakage reports, assistance with rostering, sending of any essential emails, inventory, ordering items through purchasing system etc
- Assist with the following up on delivery of purchased items by checking on regular basis with the finance team
- Checking with the kitchen team daily about non-available items, menu ingredients and also ensuring that all guest dietary requirements are understood
- Team & Team Development
- Ensure that all food and beverage team members have access to all relevant training materials at all times
- Have a commitment to the continued development of all food and beverage team members
- Ensure that all team members are scheduled for any relevant internal and external training sessions
- Identify training needs of individual team members and ensure that proper training plans are in place to address these needs
- Assist with the maintaining of accurate training records to ensure that team member’s training attendance is properly recorded
- Understands and takes into account the global nature of our business; is adept at working within a multicultural environment and is always respectful of cultural differences, both with other team members and with guests
- Finance
- Ensure proper stock control measures are in place in all areas of the food and beverage operation
- Manage all departmental costs and try to find innovative ways to reduce overall costs at all times
- Communication & Team Recognition
- Attend all relevant daily, weekly and monthly meetings
- Organize daily meetings / briefings within your outlet to ensure that all employees are kept up to date with all relevant information
- Communicate to others clearly & always follow the correct lines of communication
- Communicate with Restaurant Manager and EAM F+B to discuss department / property related issues that need attention and action.
- Communicate and ask for assistance from the management team when faced with a difficult problem or situation that you have not experienced before
- Be available for your team and be ready to coach, train & advise them
- Show passion and sincerity through your verbal and non-verbal communication, you are a Song Saa brand Ambassador
- Be open to receive feedback and provide constructive feedback to others focusing on facts and not personal opinion
- Follow all rules relating to confidentiality of property and company information and do not share information with inappropriate people
- Training & Development
- Inspire others to excel by clearly communicating business values and direction, recognizing good performance and providing support
- Develop the potential of others through coaching and training that is tailored specifically to Song Saa
- Conduct training sessions as required either alone or under the supervision of the management team
- Always be available for one to one mentoring and coaching sessions with the food and beverage team
- Always motivated to develop yourself by attending all relevant training sessions and seeking new ways to increase your knowledge
